This tiramisu is easy & delicious!
Ingredients
- 6 egg yolks, room temperature
- 1 cup sugar
- 1 1/4 cup mascarpone cheese
- 1 3/4 cup heavy whipping cream
- 2 packages lady fingers
- 2 cups brewed espresso, cooled
- 2/3 cup Kahlua
- cocoa powder for dusting
Instructions
- Combine egg yolks and sugar in the top of a double boiler. Whisk to combine for about 5-8 minutes until the mixture thickens, grows in volume and turns a pale yellow. Set aside to cool until a little warmer than room temperature.
- Next, whip the heavy cream in a mixer until stiff peaks form. Once the egg mixture has cooled, gently fold into the mascarpone cheese until combined. Next gently fold in the whipped cream.
- Combine cooled espresso with Kahlua.
- One at a time, dip a lady finger into the espresso mixture for 2-3 seconds. The longer you soak it, the stronger the flavor. Lay the dipped lady fingers in the bottom of a 9x13 pan.
- Spread half of the mascarpone mixture over the lady fingers. Repeat with another layer of lady fingers and top with remaining mascarpone mixture. Dust the top with cocoa powder.
- Refrigerate for several hours or overnight.
