Using a 9 or 9.5 inch pie plate, bake the pie crust according to package instructions. Let cool slightly.
Wash and slice strawberries in half. Arrange in baked pie crust cut side down and pile 2-3 strawberries high, covering the whole surface.
In a saucepan, combine water, sugar, and corn starch. Stir constantly until boiling. Boil for 1 minute. Remove from heat and add jello until well combined and thick. You can add more jello if needed to reach desired consistency.
Pour jello mixture onto the strawberries while still hot. Refrigerate until set. It will take a minimum of 3 hours. This dessert is perfect to make the night before.
