Strawberry Pie

Light and refreshing! A perfect make-ahead dessert for a warm day.
Prep Time 2 hours 30 minutes

Ingredients
  

  • 1 store bought pie crust
  • 1 cup sugar
  • 1 cup water
  • 2 tbsp corn starch
  • 3-4 tbsp strawberry jello
  • 3/4 - 1 quart strawberries, halved

Instructions
 

  • Using a 9 or 9.5 inch pie plate, bake the pie crust according to package instructions. Let cool slightly.
  • Wash and slice strawberries in half. Arrange in baked pie crust cut side down and pile 2-3 strawberries high, covering the whole surface.
  • In a saucepan, combine water, sugar, and corn starch. Stir constantly until boiling. Boil for 1 minute. Remove from heat and add jello until well combined and thick. You can add more jello if needed to reach desired consistency.
  • Pour jello mixture onto the strawberries while still hot. Refrigerate until set. It will take a minimum of 3 hours. This dessert is perfect to make the night before.
