Garlic Pepper Shrimp Pasta
A delicious dinner full of fresh flavors that is ready in under 20 minutes!
Ingredients
- 1/2 lb garlic pepper marinated shrimp
- 8 oz spaghetti noodles
- 1 pint grape tomatoes, halved
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/2 lemon, juiced
- 10-15 pitted Kalamata olives, sliced
- 1/2 cup reserved pasta water
- feta cheese
- parsley
Instructions
- Bring a large pot of water to a boil, add salt, and cook spaghetti according to package instructions. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium high heat, add olive oil and cook shrimp 1-3 minutes per side until they turn pink. Remove from the pan and set aside.
- In the same skillet, add a little more olive oil then add tomatoes. Reduce heat to medium and cook on both sides until slightly golden and softened. With a fork, smash the tomatoes to release the juices.
- Add minced garlic and red pepper flakes and sauté for 2-3 minutes. Add reserved pasta water and lemon juice to tomato mixture and stir to combine.
- To the skillet, add pasta, shrimp and olives and toss until pasta is well coated.
- Remove from the heat and top with feta cheese and fresh parsley.
