Amazing Ranch Pasta Salad

The perfect side dish for your summer picnic!
Course Salad, Side Dish

Ingredients
  

Dressing

  • 1 cup sour cream
  • 1/4 cup mayo
  • 4 tbsp ranch dip (dry)
  • 1 splash buttermilk, optional

Salad

  • 1 lb cooked elbow pasta, drizzled with olive oil
  • 2 carrots, diced
  • 1 1/2 cups broccoli, cut into small pieces
  • 1 cup off the bone ham, diced
  • 1/2 cup salami, diced
  • 1 cup cheddar cheese, diced
  • 1/2 cup spicy cheese, diced 3 pepper or pepper jack
  • 1/2 yellow pepper, diced
  • 1/2 red pepper, diced

Instructions
 

  • Cook pasta according to package instructions and let cool completely.
  • In a bowl, combine all dressing ingredients and set aside.
  • Dice all veggies, ham, and cheese into close to uniform pieces. In a large bowl, combine cooled pasta, all toppings and dressing and stir until well combined.
  • Let sit in the fridge for a minimum of 2 hours to let all the flavors marry before serving.
