Cheesy Potatoes
This cheesy potato side dish is easy to throw together and pairs great with any protein!

Ingredients

onion, diced

bag frozen hashbrowns or diced potatoes

cups
sour cream

10 oz can
cream of mushroom

cups
grated Colby cheese, divided

garlic salt

chicken broth
Instructions
Preheat oven to 350.
In a medium skillet, melt butter. Once it's melted, add the onion and sauté on medium heat until tender and lightly golden.
In a large bowl, combine sour cream, cream of mushroom, chicken broth, 2 cups of Colby, and garlic salt. Once combined, stir in potatoes.
Place in a greased 9x13 baking dish and cover with remaining 1 cup of cheese. Bake at 350 for 30-40 minutes.
