Roast Beef Sandwich with Creamy Horseradish Sauce

Ingredients
  

  • 3 lb bottom round roast
  • salt, to taste
  • Kinder's Prime Steak seasoning, to taste

Horseradish Sauce

  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 4 tbsp prepared horseradish
  • 3 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray roast with olive oil and season generously with salt and Kinder's Prime Steak seasoning. In an oven safe skillet, sear meat on all sides until nicely browned.
  • Place in the oven at 350 degrees for 1 hour or until internal temp reaches 125-130. Pull out and let it rest for 10 minutes. It will continue increasing in temperature while it rests.
  • Slice very thin to ensure tenderness.
  • In a skillet, toast buttered sourdough bread, add provolone cheese, sliced roast beef, more cheese and top with another slice of buttered sourdough until nicely toasted and the cheese is melted. Serve with horseradish sauce and enjoy.
