Blueberry Muffins

Blueberry Muffins
Ingredients
Muffins
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp vanilla
- 4 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 cups sour cream
- 2 cups blueberries
Crumb
- 1 3/4 cups flour
- 1/4 cup sugar
- 1 stick butter, softened
Instructions
- In a mixing bowl, beat eggs. Gradually add sugar, oil, and vanilla.
- In a separate bowl mix all dry ingredients. Alternate adding the dry ingredients and the sour cream into the egg mixture until combined. Gently fold in blueberries.
- For the crumb, mix together flour, sugar, and softened butter until a crumb is formed. It will be a sand-like texture. Sprinkle over top of the muffins before baking.
- Bake at 400 for 20 minutes.
