Rice Pudding

This recipe is very easy to make either a double or even a triple batch! It keeps in the fridge for up to a week. 

This sweet and light dessert is the perfect end to a great meal.

Rice Pudding

Prep Time 45 minutes

Ingredients
  

  • 1 cup long grain rice
  • 1 cup water
  • 3 cups milk
  • 1/2 pint heavy cream
  • 2/3 cup sugar
  • 1 tsp vanilla

Instructions
 

  • Cook rice, water, and milk on medium low heat, stirring very frequently until a pudding like texture is achieved. This takes about 30 minutes. Do not go too far from the stove or it will burn or get clumpy. The rice should be very tender and plump, most liquid absorbed.
  • Let the pudding cool off the heat for a few minutes. Then add the heavy cream, sugar, and vanilla and stir until combined.
  • Place in the fridge and serve cold with a dash of cinnamon for a little something extra.
