Roasted Boneless Leg of Lamb
Easy and full of flavor, this leg of lamb recipe will be the star of the show.
Ingredients
- 2-4 lb boneless leg of lamb
- 1/3 cup olive oil
- 1 lemon, juiced
- 3 cloves minced garlic
- 2 tbsp dijon mustard
- 1 sprig fresh rosemary, chopped
- 3 sprigs fresh thyme, chopped
- 1 1/2 tsp salt
- 1 tsp pepper
- 1 onion, sliced
Instructions
- Preheat the oven to 375. Slice your onion and cover the roasting pan. Remove lamb from package and place on top of the onions. If your lamb came pre-tied, leave the ties in place. If not, wait to tie until after it's seasoned.
- In a bowl, combine oil, lemon juice, garlic, mustard, herbs and salt and pepper and whisk to combine. Brush all over the lamb until fully coated, pouring any remaining marinade on top.
- Roast at 375 covered for 1 hour. Remove foil and finish roasting until an internal temp of 135-140 is reached. Let it rest for 10 minutes before slicing. Slice thin and top with the juices.
