Taquitos
It's a fun take on Taco Tuesday! We know y’all will LOVE it as much as we did.
Taquitos
Ingredients
- 2 lbs ground beef
- 1 poblano pepper
- 1 Spanish onion
- 2 chipotle peppers in adobe sauce
- 1 packet chorizo or taco seasoning
- salt, pepper, garlic powder to taste
- 3 cups shredded cheese
- 25-28 corn tortillas
Instructions
- Fry beef till golden brown and then finely chop your peppers + onion. Fry till the veggies are tender. Then add your seasonings.
- Once your seasonings are well incorporated into your meat and veggie mix, add your cheese and melt it into the meat mixture.
- Warm your corn tortillas in the oven for 2 mins till soft , so they roll easily and don’t crack as much.
- Put filling in the tortilla and roll tightly up. Drizzle with olive oil.
- Bake at 425° approximately 10 mins then flip them and bake another 10-15 mins. or until crunchy. Top with some grated Parmesan and fresh diced cilantro.
