Cheesy Potatoes
This cheesy potato side dish is easy to throw together and pairs great with any protein!
Ingredients
- 5 tbsp butter
- 1 medium onion, diced
- 1 30 oz bag frozen hashbrowns or diced potatoes
- 1 1/2 cups sour cream
- 1 10 oz can cream of mushroom
- 3 cups grated Colby cheese, divided
- 1 tbsp garlic salt
- 1 1/2 cups chicken broth
Instructions
- Preheat oven to 350.
- In a medium skillet, melt butter. Once it's melted, add the onion and sauté on medium heat until tender and lightly golden.
- In a large bowl, combine sour cream, cream of mushroom, chicken broth, 2 cups of Colby, and garlic salt. Once combined, stir in potatoes.
- Place in a greased 9x13 baking dish and cover with remaining 1 cup of cheese. Bake at 350 for 30-40 minutes.
