Cheesy Potatoes

This cheesy potato side dish is easy to throw together and pairs great with any protein!
Course Side Dish

Ingredients
  

  • 5 tbsp butter
  • 1 medium onion, diced
  • 1 30 oz bag frozen hashbrowns or diced potatoes
  • 1 1/2 cups sour cream
  • 1 10 oz can cream of mushroom
  • 3 cups grated Colby cheese, divided
  • 1 tbsp garlic salt
  • 1 1/2 cups chicken broth

Instructions
 

  • Preheat oven to 350.
  • In a medium skillet, melt butter. Once it's melted, add the onion and sauté on medium heat until tender and lightly golden.
  • In a large bowl, combine sour cream, cream of mushroom, chicken broth, 2 cups of Colby, and garlic salt. Once combined, stir in potatoes.
  • Place in a greased 9x13 baking dish and cover with remaining 1 cup of cheese. Bake at 350 for 30-40 minutes.
