White Chicken Chili

This white chicken chili will warm your soul. Full of flavor and super easy to make. You can even try this in the crock pot.

White Chicken Chili

Ingredients
  

  • 1 lb boneless skinless chicken breast, cut into cubes
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 24 oz chicken broth
  • 2 15 oz cans great Northern beans, drained and rinsed
  • 2 4 oz cans diced green chilis
  • 1 15 oz can corn
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 4 oz cream cheese, softened
  • 1/2 cup half and half

Instructions
 

  • In a deep pot, add 1 tbsp of olive oil and sauté your onion until soft and translucent. Add garlic and diced chicken. Cook until chicken is cooked through.
  • Add chicken stock, seasonings, beans, corn, and chilis. Stir well and let come to a boil. Reduce heat to a simmer and put a lid on it and let it simmer for 30 minutes.
  • Add your softened cream cheese and half and half. Stirring frequently, make sure that the cream cheese melts into the chili and it starts to thicken, about 15 minutes.
  • Top with cheese, sour cream, green onions, cilantro, lime, or avocado. Or all of the above! Enjoy!
