White Chicken Chili
Ingredients
- 1 lb boneless skinless chicken breast, cut into cubes
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 24 oz chicken broth
- 2 15 oz cans great Northern beans, drained and rinsed
- 2 4 oz cans diced green chilis
- 1 15 oz can corn
- 1 1/2 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 4 oz cream cheese, softened
- 1/2 cup half and half
Instructions
- In a deep pot, add 1 tbsp of olive oil and sauté your onion until soft and translucent. Add garlic and diced chicken. Cook until chicken is cooked through.
- Add chicken stock, seasonings, beans, corn, and chilis. Stir well and let come to a boil. Reduce heat to a simmer and put a lid on it and let it simmer for 30 minutes.
- Add your softened cream cheese and half and half. Stirring frequently, make sure that the cream cheese melts into the chili and it starts to thicken, about 15 minutes.
- Top with cheese, sour cream, green onions, cilantro, lime, or avocado. Or all of the above! Enjoy!
