Wild Rice Soup
Perfect for either your leftover Thanksgiving turkey or ham, this soup is super versatile and delicious!
Wild Rice Soup
One of the best ways to use your leftover turkey!
Ingredients
- 2 tbsp butter
- 1/2 small onion, diced
- 1/4 cup flour
- 4 cups chicken broth
- 2 cups cooked wild rice
- 3/4 cup diced turkey or ham
- 1 large carrot, chopped fine
- 3 tbsp chopped slivered almonds
- 1/2 tsp salt
- 1 cup half and half
Instructions
- Cook wild rice according to package instructions. Set aside.
- In a large stock pot, melt butter and add onions. Cook until translucent.
- Add flour and mix until combined. Add chicken stock. Stirring constantly, stir until smooth, ensuring no clumps of flour.
- Add diced turkey or ham, carrots, almonds and salt. Cook on medium low for 5 minutes.
- Add half and half. Cook for another 5 minutes and serve.
