Wild Rice Soup

One of the best ways to use your leftover turkey!
Course Main Course

Ingredients
  

  • 2 tbsp butter
  • 1/2 small onion, diced
  • 1/4 cup flour
  • 4 cups chicken broth
  • 2 cups cooked wild rice
  • 3/4 cup diced turkey or ham
  • 1 large carrot, chopped fine
  • 3 tbsp chopped slivered almonds
  • 1/2 tsp salt
  • 1 cup half and half

Instructions
 

  • Cook wild rice according to package instructions. Set aside.
  • In a large stock pot, melt butter and add onions. Cook until translucent.
  • Add flour and mix until combined. Add chicken stock. Stirring constantly, stir until smooth, ensuring no clumps of flour.
  • Add diced turkey or ham, carrots, almonds and salt. Cook on medium low for 5 minutes.
  • Add half and half. Cook for another 5 minutes and serve.
