Citrus Roasted Chicken
This recipe is full of flavor and will have your house smelling amazing. It's a great healthy weeknight meal.
Citrus Roasted Chicken
A super simple but flavorful chicken dish that the whole family will love. Goes well with brown rice and a side salad.
Ingredients
- 4 bone in chicken leg quarters
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 tbsp sugar
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 1/2 tsp paprika
- pinch of red pepper flakes
- 2 lemons, 1 sliced, 1 juiced
- 2 oranges, 1 sliced, 1 juiced
- 1/2 red onion, sliced
- fresh thyme and fresh rosemary
Instructions
- Preheat oven to 400 degrees.
- In a bowl, juice 1 lemon and 1 orange. Add olive oil, sugar, Italian seasoning, salt, pepper, onion powder, paprika and pepper flakes. Whisk together until well combined.
- Add chicken to a casserole dish. Pour marinade over the chicken and brush marinade all over the chicken so that it's evenly coated.
- Slice remaining lemon and orange and also slice the red onion. Arrange over top of the chicken. Top with sprigs of fresh rosemary and thyme.
- Bake covered for 1 hour then remove the foil and bake 1 additional hour until the meat is fall off the bone tender and the skin is nicely brown. Remove citrus, onions and herbs from the top before serving.
